You can try to stay at Ramada Hotel Kowloon, Hong Kong at Tsim Sha Tsui area with a very convenient transportation. So, from the airport to the hotel, you can take bus N21 to Tsim Sha Tsui at midnight. It costs HKD33/person. If you take the airport express train, it costs HKD90/person.
You can spend a whole afternoon to visit Disneyland. I think it it worth visiting.

If you stay in HK Island, you hsould take bus N11 from the airport to Central, then catch taxi to your destination.
I think Macau is really worth visiting.
