When will you arrive in Hong Kong? Since you have three kids, I think you'd better take a cab to the hotel in Tsim Sha Tsui directly. The fare is about HKD400.
1. In the morning, you could walk to the Avenue of Stars and then take a ferry from Tsim Sha Tsui Ferry Terminal to Central. From Central, hire a cab driving you to the Peak Tram Station, where you could take the tram to Victoria Bay. Finally, you could take a metro from Central back to Tsim Sha Tsui and enjoy the Symphony of lights at 20:00.
2. From Tsim Sha Tsui station, which is walking-distance to your hotel, you could take Hong Kong metro to Diseyland directly.
3. Take the metro to Admiralty and then at the exit B, you could take bus629 to Ocean Park. After back to your hotel for a short rest, you could go to the Mongkok market at night by taxi. Not far
4. Take the metro and get off at Tung Chung, you could go to the CityGate Outlets from the metro station. Then, follo the signposts to take the Ngong Ping 360 to visi the Giant Buddha.
