About:FAQ of Chinese Visa Application

I am currently in China visiting my wife on an L visa. My wives family found a local school that would like me to teach English for them. When the school went to apply for an invitation letter for me to convert my Visa to a work one, they were told that I would have to go to either South Korea or Hong Kong and then the invitation letter would be sent to the consulate in either of those two countries. My question is has anyone ever heard of something like this before and can I get a work visa if I go to South Korea or Hong Kong?

Yes, rarely applicants can get a Chinese Employment Visa(https://www.travelchinaguide.com/embassy/visa/work.htm) within Mainland China or change L visa to Z visa within Mainland China, you'd better go to Hong Kong to apply for Z visa, it is complex for China visa application in South Korea. The China embassy in Seoul asks non-Korean applicants to provide Alien Registration Card valid for at least 6 months. You don't have the Alien Registration Card.
