About:Chinese Embassy in South Korea

Hello, I am planning on travelling to the Middle East with a Chinese airline. The plane has a layover in China do I still need a visa, if I am a U.S Citizen? Eventhough I am just stopping for a layover?

You need to apply for a visa to China in advance through Chinese embassy/consulate in the consular jurisdiction where you reside.
