How long will I be able to extend my tourist visa in Hong Kong?

I have to go to Hong Kong and extend my tourist visa. Im wanting to extend for the longest period possible cause in Beijing at the moment you can only extend it for one month, and its a real hassle. How long will I be able to extend for in Hong Kong (I will be returning to mainland china) and what do I need to bring with me down to the office?

You need to bring the documents as same as you apply for China tourist visa, the stay duration is up to visa officer of Commissioner's Office of Foreign Affairs Ministry in Hong Kong, maybe you can get a new visa with 90 days stay duration.

When I apply for an extension here in Beijing, I have to have $3,000 American in a bank account. Do I need that for the new Hong Kong visa?

A new Hong Kong visa? as a Canadian passport holder, you do not need to apply HK visa if you will stay there not more than 90 days.

Not to stay in Hong Kong. I have to go to Hong Kong to get a new visa for mainland China.
