1. After checking in to the Langham Place Hotel we Wish to visit the Peak, Repulse Bay, watch the symonphy light and visit the Temple street and Ladies street on the first day.
2. Checking out of hotel in the next morning and travelling to Lantau island to visit the Giant Buddha as well as shopping at Citygate. And then proceed to the airport.

Please advise which MTR card is more suitable for us and please advise the easiest way to travel to these places. And which is the most convinent way to travel to the airport from Citygate.

I think the Tourist Day Pass is the most suitable one for you, from Langham Place Hotel to the attractions you mentioned, MTR would be frequently used.
To the Peak, take MTR to Central Station and then take Bus 1 or the Peak Tram
To Repulse Bay, take MTR to Central and then take Bus 6 to Repulse Bay.
To Symphony of Light, take MTR to Tsim Sha Tsui Station and then walk to Star Avenue.
To Temple Street, Take MTR to Jordan Station and then walk there.
To Ladies Street, walk there from your hotel.
Travel between Citygate Outlets to the airport, you can take Bus S1.

Since you'll check out of the hotel and then travel to ngong Ping, I suggest you store your luggages at Citygate outlets.

For Breakfast, there are many restaurants in Mong kok area, I think you can find a traditional one and taste some Dim Sum.
