About:China Visa Application in USA

I am planning a trip to China but am going to be out of town most of the summer domestically (USA) on business. I will be back for two separate weeks, 3 weeks apart from each other, but gone the rest of the time right up until my departure to China (Sept 2010). I plan on getting all of my VISA paperwork in and visit the consulate during this first week back in Los Angeles. Thing is, do I HAVE to pick up the visa and passport on the date that they assign? Because I will likely be out of town. I have no spouse or children, no one closer than a first cousin with a different surname, living in Los Angeles. I say this because you told a man that he could likely pick up the visa for his wife. I don't have that option.
Do you think that they will let me delay my pick up of my passport and visa? Or would they be amenable to sending it? (though I would much rather pick it up!) Are there any options here that I'm not thinking about?

Ms.Ezra, please pick up your visa and paspsort on the date that the visa officer assign, if you pick them up late, maybe the passport and visa will be damaged by the consulate, it is not amenable for the consulate to send them back to you. You can entrust a visa agency or travel agency in Los Angels to pick up your visa and passport.
