You need a China Visa to visit Shenzhen, but non-visa is required to visit Macau.

From Hong Hong to Macau: you could take a ferry at HK-Macau Ferry Terminal and then return by ferry as well in one day. Alternatively, you could stay one night in Macau to experience its nightlife.

From Hong Kong to Shenzhen: you could apply for an onsite visa to visit the Speical Economic Zone in Shenzhen at the Luohu Port between these two cities. From downtown HK, you could take a metro to reach Luohu directly, and then return to HK before 24:00 at night.

As for Hotel, you could consider the Casa Hotel, the Tatami Hampton Hotel and the Anne Black-YWCA. The fare is about HKD300~500/night.
