You should find a notary public to issue a single-status certificate and then authenticated by Chinese embassy. Then when you come to China, you and your wife should bring the materials to the Ministry of Civil Affairs to get registered. Currently, you can apply for an L visa. After you getting married in China, you can apply for a resident visa for a long period of stay.

On your wife's side, she should also need a single-status certificate stamped by the Minsitry of Civil Affairs of P.R.C. For a resident visa, you probably have to go back to your home country to apply after you get the Chinese residence permit. I am not sure if there is the possibility in getting a resident visa within mainland China.
