Hi

I am planning to visit Macau in May and am also thinking of crossing the boarder to Zhuhai for some shopping.

If I return from Zhuhai to Macau in the same day & then crosses the boarder to Zhuhai again the next day, is this considered Double/Multiple entry of which I need a VISA ?

Yes. it is considered "double-entry" since you enter the border of Zhuhai twice.
