The essence of 240 hour visa free transit scheme requires that the immediate points before and after mainland China are located in two different countries or eligible territories. Eligible territories are Hong Kong, Taiwan and Macau. As you can see, both of your immediate points are located in just one eligible territory - Hong Kong.
In any case, there are two solutions in your case:
1. If you plan to stay in Shenzhen only and stay for up to 5 days, the best solution is to apply and obtain a Shenzhen 5 day visa on arrival at Lo Wu / Luohu border crossing. The price of Shenzhen VOA is very affordable amount of 130 CNY.
2. If you plan to stay for more than 5 days and beside Shenzhen you plan to visit other cities / regions, then you can insert Macau into your itinerary and make it eligible for 240 hours (10 days) visa free transit scheme. Like this your itinerary could look like: Hong Kong - Macau - Shenzhen (mainland China) - Hong Kong. You can easily take a ferry from Hong Kong to Macau, then immediately from Macau to Shenzhen and after your stay in Shenzhen (mainland China) proceed toward Hong Kong by direct train to Hong Kong West Kowloon train station.
