240 hours free transit

I am currently staying Korea.
Is it possible to visit Kunming and Lijiang from Korea, travel to Nepal, and then return to Korea via Shanghai -utilizing the 240-hours visa free transit scheme?

Yes, you are definitely allowed to enjoy your presented itineraries:

South Korea - mainland China (Kunming, Lijiang) - Nepal

Nepal - mainland China (Shanghai) - South Korea

They are both eligible for 240 hour visa free transit and you are allowed to enjoy two or more 240 hour visa free transits within a short time frame. You should just keep in mind that you will have to book your exit ticket from mainland China before you depart toward it. So, having your Nepal bound ticket before your check-in in South Korea is a must and also having your South Korea bound ticket before your check-in in Nepal is a must.
