I have to tell you that your itinerary is not eligible for 240 hour visa free transit since it does not comply with the basic rule of 240 hour visa free transit and that basic rule clearly states that the immediate points before and after mainland China have to be in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Guangzhou). As you can see, your both immediate points are located in one eligible territory - Hong Kong.
In any case you can easily make your itinerary eligible by introducing Macau into the equation. So, after your arrival from LHR to Hong Kong you can take a bus or ferry to Macau. When you enter Macau, take a taxi or a public transport to Hengqin border crossing (located in the south of Macau, Cotai area) where you will enter mainland China. You will just walk through a passageway to reach Hengqin railway station. From here you will take a train (15 - 20 minutes or ride) to Zhuhai train station. You should not buy your Hengqin to Zhuhai train ticket in advance, but in person at the ticket counter of Hengqin train station. There are roughly 35 daily departures from Hengqin to Zhuhai train station, so you will just wait for the first available train. When you reach Zhuhai train station you will take a train to Guangzhou.
Please, have in mind that you will have to buy your exit train ticket, Guangzhou to Hong Kong West Kowloon train station before you arrive at Hengqin border crossing because you will be asked to present it at Hengqin border crossing. The alternative to this option is to take a ferry from Hong Kong to Macau and then a ferry from Macau to Shekou in Shenzhen. It will be up to you to choose between the two.
