The basic rule of 240 hour visa free transit requires that the immediate points before and after mainland China are located in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). As you can see both of your immediate points are located in just one country - South Korea. You can make your itinerary an eligible one by introducing, for example, Japan into equation:
Seoul (South Korea) - Beijing (China) - any airport in Japan - Seoul (South Korea)
As you can see, like this your immediate points before and after mainland China would be located in two different countries namely South Korea (before) and Japan (after).
