Yes, your entire itinerary and your understanding are a real textbook example of how 240 hour visa free transit is used/performed. I have just two details to help you in your overall journey:

- Upon arrival in Shekou port, do not make a mistake and apply for Shenzhen 5 day visa on arrival because you will see some of travelers doing exactly that. You do not need that visa, but you will apply for a temporary entry permit under 240 hour visa free transit.
- If you do not plan to stay or perform some activities in Shenzhen, after your stay in Guangzhou, you can travel by a direct train from Guangzhou to Hong Kong West Kowloon station. If you have something to do in Shenzhen, then Shenzhen to Hong Kong West Kowloon station is the right one. It is advisable to have that train ticket booking as a printout or at least as a screenshot on your smartphone.

Have a nice visit to China.
