Unfortunately, there is no visa on arrival at Shenzhen airport. Your best solution is 240 hour visa free transit. So, before you depart from Vietnam you will buy a train ticket from Shenzhen to Hong Kong. Please, have in mind that your train departure from Shenzhen to Hong Kong has to be at least 24 hours away from the time of your arrival by plane to Shenzhen. Also, you will really have to use that train. Like this you will create an eligible itinerary: Vietnam - mainland China (Shenzhen) - Hong Kong that is eligible for 240 hour visa free transit. When you arrive in Hong Kong you are free to travel wherever you want. Also, you are free to travel back to Shenzhen where you can obtain a Shenzhen 5 day visa on arrival at Lo Wu / Luohu border crossing for the price of 130 CNY. From Shenzhen you can take a flight to any country you want, but that flight is not allowed to have any additional landing within mainland China.
