No, you do not need any kind of visa if you travel from one country, for example Australia via China to UK. Your layover in China can be starting from just a couple of hours, until 10 days long. If your layover is under 24 hours long, you will be covered by 24 hour visa free transit and if your layover is longer than 24 hours and up to 10 days long, you will be covered by 240 hour visa free transit. In other words, you do not need any kind of visa for transits of this kind. It is just essential to understand that it has to be a real transit: Country A (Australia or Thailand or New Zealand) - transit through China - Country C (and country different than country A). If your transit looks like this, you can freely travel absolutely visa free and you do not need a visa at all.
