Yes, you are allowed to cross the provincial borders under 240 hour visa free transit. You can use any mean of transport to travel between different Chinese cities, taxi, bus, train and plane included. Every single detail you have written is allowed. Also, you can travel from Beijing to both Xi'an or Shenzhen by both train or plane. You are allowed to take a train from Xi'an to Shenzhen as well. In the end, it is important to understand that you will have to buy your Shenzhen to Hong Kong train ticket even before you depart from UK or some other country toward Beijing. You will be asked to present that ticket in both UK at the time of your check-in and also upon your landing in Beijing. This is the proof that you will be in a transit between UK and Hong Kong. Please, have in mind that you are not allowed to take a flight from Hong Kong to Beijing and then after 10 days to exit to Hong Kong. Your immediate point before Beijing has to be in a country or eligible territory that is different than Hong Kong. So: UK - mainland China - Hong Kong is fine and Taiwan - mainland China - Hong Kong is fine, but Hong Kong - mainland China - Hong Kong is not fine.
