Anthony, you will have to adapt somewhat your first itinerary so that it becomes eligible because currently it is not eligible in the way as it is presented. The essence of 240 hour visa free transit requires that the immediate points before and after your mainland Chinese visit (holiday) are in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). Your first itinerary has its both immediate points in Hong Kong regardless of the fact that your visitors will not cross Hong Kong immigration during their transfer to HKIA Skypier. So, the solution for your first itinerary is: UK - Hong Kong (by ferry) - Shekou - CN holiday - Macau (by ferry from Shekou). It is important to have Shekou - Macau ferry ticket already bough even before they depart from UK because it will be asked by Hong Kong (maybe even UK authorities) and upon arrival by ferry in Shekou. As far as your second itinerary is concerned, it is important that the train ticket from Guangzhou to Hong Kong is bough even before departure from UK to Guangzhou. Also, when returning from Hong Kong to Guangzhou it is important to understand that taking a train on Hong Kong to mainland China is not eligible way, but eligible options are: taking a direct flight from Hong Kong to Guangzhou or taking two ferry lines, Hong Kong to Nansha (located just south from Guangzhou) and Hong Kong to Shekou (in Shenzhen as you already know). Just one detail here. When arriving under the itinerary number one, they can take a ferry to Nansha (if there is one suitable) instead to Shekou because Nansha is closer to Guangzhou than Shekou. I wish to your visitors a pleasant journey.
