Jake, you will need to make some changes in order to be eligible for 240 hour visa free transit. The first detail is that you cannot use a train to exit Hong Kong in direction to mainland China. It is allowed to use it other way round, but not to exit Hong Kong. A very good alternative is to take a ferry from Hong Kong to Nansha (a port located just south from Guangzhou and connected to it by a metro) or to Shekou (Shenzhen neighborhood). When you have arrived in either Nansha or Shekou, you can proceed to Guangzhou or any other place you plan to visit. It is important to have that flight ticket for Vietnam at hand, ready to present because you will be asked to present it in both Hong Kong (upon your departure toward mainland China) and in Nansha or Shekou where you will formally fill out a form to get a temporary entry permit. Also, one very important detail. Your total spent time in mainland China is not allowed to be shorter than 24 hours! This is counted from your scheduled arrival time in Shekou or Nansha until your scheduled departure time to Vietnam. Please, keep on mind this very important detail. Have a nice journey.
