Caroline, it's a 240h visa free transit policy, not a 240h visa, meaning that qualified visitors can enter Mainland China without a visa. if you want to enjoy this policy, you are required a settled destination except for HK after Mainland China. Actually, I advise you to apply for a visa upon arrival in Shenzhen at Luohu, Huanggang and Shekou Port to enter this city and have a trip.

Caroline, you cannot use 240 hour visa free transit in this case, but a Shenzhen 5 days visa on arrival (VOA). You will arrive at Lo Wu (Luohu) border crossing in the morning hours. The visa office opens at 09:00, so be there at least a half an hour before that. There you will apply for a visa, pay 130 CNY by card only for each of you and you will be granted visa that allow you a stay in Shenzhen for 5 days. After your stay in Shenzhen you can return back to Hong Kong by taking any border crossing and also by taking any mean of transport, high speed train included. Have a nice visit to Shenzhen.
