If you plan a trip like Tunisia - main cities in China - the third country, then you can enjoy a 144-hour visa free transit in China. Visa on arrival is not 100% reliable and is only available in Shenzhen, Zhuhai and Xiamen. More importantly, the allowed duration of stay is quite short.
A more practical way is to apply for an L visa at the China Embassy and the main requirements are:
Passport with at least 6-month validity
Visa Application Form and Photo
Documents showing the itinerary including air ticket booking record (round trip) and proof of a hotel reservation, etc. or an invitation letter issued by a relevant entity or individual in China.
So you can see that if you cannot provide an invitation letter, you can provide others instead.
