In case if you have presented all the stops within your itinerary, you are definitely eligible for 144 hour visa free transit in wider Shanghai area.

The journey into Shanghai and the out are one set of flight

So its UK to Shanghai via the netherlands and then Shanghai to UK with a connection in paris

Yes, this is eligible and you have perfectly understood this scheme. All that matters is that the immediate points before and after Shanghai are in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). In your case, the immediate points are Amsterdam and Paris and they are located in two different countries. Whenever you will be asked about the visas, especially in Paris, you will just say that you will travel to Amsterdam via Shanghai using 144 hour visa free transit.

You are good to go.
