Am i eligible for the visa?

Hello,
My flights are as follows would i be eligible
UK - Netherlands - Shanghai - Paris - UK

So its UK to Shanghai via the netherlands and then Shanghai to UK with a connection in paris

Yes, this is eligible and you have perfectly understood this scheme. All that matters is that the immediate points before and after Shanghai are in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). In your case, the immediate points are Amsterdam and Paris and they are located in two different countries.
