Antonie,
Both of your trips are ineligible, but with some make up, they can become eligible.
1st trip - In order to reach Macau, you will have to take a ferry from Shekou port in Shenzhen to Macau. You will buy your ferry ticket through TurboJet website and print out the ticket. You will need it as a proof that you will be in a real transit. Also, you will easily reach Shenzhen by train from Guangzhou. Please, have in mind that you will have to take exactly that ferry that you bought your ticket for. Like this you will be eligible for 144 hour visa free transit in entire Guangdong province.
2nd trip - To be eligible for 24 hours visa free transit, you have to fly from Hong Kong to Guangzhou. Simply speaking, the 24/144 hour visa free schemes do not function unless you enter by air. Since there is no direct flight from Macau to Guangzhou, you will have to reach Hong Kong airport and fly from there to Guangzhou and then proceed toward Xi'an and to Paris.
I understand that with this "make up" both trips have become more complicated, but at least they are eligible for visa free transit options. So, now it is up to you decide.
