About:240-Hour Visa-Free Transit

HK - Shanghai - Macau

I have a visa student for hong kong, can I use the 144 transit rule to fly HK to Shanghai and then Shanghai to Macau?

Yes, you can. You should just take care that your flights:

Hong Kong - Shanghai
Shanghai - Macau

Are nonstop flights.

Your status in Hong Kong is not important, your citizenship is. If you are Italian citizen, you are fine to use 144 hours visa free transit.
