Itinerary

Is Hong Kong —> Shanghai —> Tokyo a valid itinerary for the 144 hour visa? US citizen. Thank you!

Yes, it is. It is important that your itinerary does not have any additional landing within mainland China. Also, this is 144 hours visa free transit, so there is no visa at all :)
