I am supposed to go to China to teach English by end of January. Do I need to show proof of a bachelors degree in order to receive the visa?

Yes, you do have. Working visa is provided only for those who hold bachelors degree or above education level. However, working visa for English teacher's position is granted only for those individuals who have passport of a native-speaking country, like for example UK, America, SA etc.
If you are not from the English Speaking country, you can get working visa through another role -example subject teacher / educational consultant or whatever, but not "English teacher".
