I  have never been/know anyone in China. I want to go to China to explore some business ideas/establish relationships with Chinese businesses. What visa do I apply for and how?

You can only apply for a tourist visa if you don't know anyone in China. You need to book tickets, hotels first and then apply for the visa, but you should wait until China reopens the border for tourists.
