My partner is Chinese but we are not married, is there any likelihood to apply S2 visa.

What documentation could she or her family provide to support an application? Is it worth a try?

At present, it will be very difficult for you to get the S2 visa if you are not married. I think it's not worth a try.

Any possibility to apply to continue courses of medical treatment? I was having acupuncture in a Shanghai hospital and have the registration medical book and card for that. Just another thought. It does mention that as a 'private reason.'
