About:240-Hour Visa-Free Transit in Guangdong

"Asia" - Guangzhou - Hong Kong - Exit

I would fly into Guangzhou from somewhere in Asia on a Monday, Wednesday take a train to Hong Kong, Saturday fly home to Europe. Would the be possible?
Getting into CAN would be a separate ticket.
