If I want to go Hong Kong Kowloon West -> Shenzhen North -> Xian North

is one hour enough to transfer trains in Shenzhen station?

If transfer within Shenzhen North Station, one hour is fine. You can find transfer passage to reach waiting hall and checkin again for the second train.
