You don't need a visa because your itinerary is perfectly eligible for 24 hour visa free transit.

You will print out your flight tickets and have those printouts with you. Also, you will declare at check-in in Munich that you will travel to Auckland via China using 24 hour visa free transit. After a short inspection of your tickets, you will be allowed to board the plane. Exactly here you will ask about your luggage. You didn't mention the tickets and airlines you will use, but in case if you are traveling on Lufthansa and/or Air China all the way to Shenzhen, you will ask whether your luggage will be tagged to Shenzhen or you will have to collect it in Beijing and perform a recheck for your flight to Shenzhen.

Upon arrival in Beijing, you will immediately approach 24 hour visa free transit counter where you will apply for a temporary entry permit to be allowed to continue your journey because your next flight will be a domestic one. Please, keep in mind the detail with your luggage. Upon arrival in Shenzhen, you will clear the immigration and slowly walk to your boarding gate for Hainan Airlines flight to Auckland.
