Yes, this is perfectly possible and allowed. Anyway, you should be very focused and follow the next steps:

You will print out your flight tickets and have those printouts with you. Also, you will declare in Seoul that you will travel to Indonesia via Guangzhou using 24 hour visa free transit. After a short inspection of your tickets, you will be allowed to board the plane. One more important detail. Here you will ask whether your luggage will be tagged all the way to Indonesia. If you are flying on a single (through) ticket, this will be a case almost for certain, but you should ask just for a case.

Upon arrival in Guangzhou, you will have to be very focused and continue to repeat that you are just in transit using 24 hour visa free transit. Please, just don't be tired to repeat this ten times if necessary and if asked about your visa, you will plainly tell them that you want to use this visa for your family visit to China in January.

They will understand you and your visa will not be used. Again, just don't forget to mention that you will fly on 24 hour visa free transit at check-in in Seoul and again in Guangzhou! You will be fine and your visa will arrive in Indonesia ready to use on January 1.
