About:Visa on Arrival

Exactly 5 days

Suppose my visa expires on 21th Dec. Can I book a flight on 22nd Dec 02:30am but I check in before midnight 12am. Theory racially I check in and left the China border point before it expire but my flight only board after that.

No, you are not allowed to do that. The only time that matters is the scheduled departure time of your flight and not the time you have crossed the formal border. If you try to do this what you have described, you will run into overstay and you could be detained and fined.
