Your entire itinerary is definitely eligible for visa free transit.

During your first stop in Shanghai, you will be eligible for 144 hour visa free transit because your stay will be longer than 24 hours. I assume that you have separate tickets and this is perfectly acceptable. Please, keep in mind to print out your flight tickets and to have those printouts with you.

During your second stop, at least as I have understood you, you will stay in Shanghai just for several hours. For this reason, you will be eligible for 24 hour visa free transit because your stay in Shanghai will be less than 24 hours long. In any case you don't need any kind of visa. Anyway, if you travel on separate tickets, you will have to approach 24 hour visa free transit and apply for a temporary entry permit to be allowed to collect your luggage and to perform a recheck for your flight to Italy. Nothing special, just a procedure, but you should know this detail.
