Australian passport holder flying from Manila to CAN for approximately 36 hours, can I then drive/ferry/train to Hong Kong? Is the transit visa on arrival at CAN ok for this trip?

Generally you can't get a visa on arrival at CAN, but you can use the 144h visa-free transit if you meet the requirements. To be eligible for it, you can only take a flight or conventional train from Guangzhou to Hong Kong and you flight from Manila to CAN should not have a layover in HK.
