Your entire itinerary is definitely eligible for 24 hour visa free transit, both ways and you don't need any kind of visa.
I hope you are traveling on a single (through) ticket all the way because your layover in Shanghai, of just 2 hours, is very short. It is fine if you are on a single ticket, but not enough if you are traveling on separate tickets.
Also, you are fine as far as Thailand visa is concerned because Mexican citizens are eligible for a 15 day Thai visa on arrival. In other words, you can travel to Thailand without a visa because you will be granted one upon your landing at the airport. You will tell exactly this to a Chinese official if asked. This is relatively new circumstance because this "visa on arrival" for Mexican citizens is in force from April of this year.
You will print out your flight tickets and have those printouts with you. Also, you will declare at check-in in US that you will travel to Thailand via China using 24 hour visa free transit. You will tell the same thing to Thai authorities at check-in in Thailand, but in reverse order.
During your first stop in Shanghai, you will stay all the time within the transit area of Shanghai airport, but during your second stop, since your layover will be a long one, you are advised to try to obtain a temporary entry permit at 24 hour visa free transit counter, especially if your layover will be during the night hours. Of course, you have to be aware that the issuing of this permit always depends on sovereign discretion of Chinese immigration on the day of your arrival in Shanghai.
