Tony, it works, but I will point out to some possible problems:
1. Although there is a direct, nonstop flight from Germany to Qingdao by Lufthansa and this is fine, Qingdao lacks direct flight connections to Vietnam. In other words, you will have to insert an additional stop between Qingdao and Vietnam, but this stop has to be outside mainland China. It can be Hong Kong as a logical choice. In any case, you should not have any additional landing within mainland China of any kind beside Qingdao. Like this, you will be eligible for 144 hour visa free transit in Qingdao.
2. You can arrive to both Shenzhen or Guangzhou from Vietnam and you can also choose any one of both airports to depart back to Europe. They are both fine because they are located within Guangdong that is a single transit area. Anyway, again, you are not allowed to have any additional landing within mainland China of any kind, beside those two airports in Guangdong province.
No, there is no a requirement that you have to stay for some specified period outside China to be able to use visa free transit option again. In reality, there is not limit on how often will you use this option and how many days will you stay outside China to be allowed to use it again, In reality, you can use this option as much as you want, practically on a weekly basis or even more often.
