Don't worry because the offices that handle visa free transit open with every arrival that could have passengers traveling on one of the possible schemes. In other words, you will not have to wait until 10:00 to perform this formality.

You are right when you say that both Shenzhen Bao'an and Guangzhou Baiyun offer 144 hour visa free transit options.

Assuming that you will travel to Hong Kong after your arrival, I have to inform you that you will have to stay within mainland China for at least 24 hours + 1 minute to be eligible for 144 hour visa free transit.

Also, you will need to book a ferry from Shenzhen Shekou port to Hong Kong or a train from Guangzhou to Hong Kong in advance and to have an e-confirmation in your hand already in Indonesia. You will do it online in advance through relevant websites and immediately after a booking you will receive an e-confirmation that you will print out and to have that printout with you as a proof that you will travel in transit. Again, be very careful to book your ferry/train at least 24 hours + 1 minute after your scheduled arrival by plane!
