This is just a round trip or a visit to China, so in this case this option is invalid.

Your second option is not convenient because if you go first to Hong Kong, you will have to fly from Hong Kong to Guangzhou to be eligible for 24 hour visa free transit. Your flight from Germany to Guangzhou has to be nonstop. Before your departure from Germany, you will have to book your train ticket for Hong Kong. Please, have in mind that the only train that is eligible for visa free transit option is the one departing from Guangzhou East and arriving at Hung Hom railway station in Hong Kong. When booking this train, you should use some of reliable travel agencies that will insert your name on e-confirmation that you will receive on your email. When you have arrived on this website, you can also book this train exactly here, but be informed that you will have to book your ticket at least 7 or 8 days before your train departure day, to allow to the agency to deliver the real train ticket to your address in Guangzhou.
