Can I make use of the 72 hours visa for the itinerary below?

Paris - Hong Kong - Nanjing

and then

Nanjing - Hong Kong - Paris

Of course not. You are flying Hong Kong-Nanjing-Hong Kong and therefore not in transit to a third country/region. You must get a visa or change your flights.
