So, your itinerary will be:

Italy - Shanghai - Philippines

If you don't have any additional stop within mainland China, your stop in Shanghai is definitely eligible for 144 hour visa free transit. Please, have in mind that 72 hour visa free transit was replaced in Shanghai by 144 hour visa free transit a couple of years ago.

Philippines - Seoul or Taipei - Shanghai - Italy

This portion of your itinerary is also eligible for visa free transit regardless whether you will fly to Shanghai from Seoul or Taipei. If you don't have any additional landing within mainland China beside Shanghai, you can enjoy 24 or 144 hour visa transit in direct relation for how long will you decide to stay in Shanghai area.

To conclude, if you don't have any additional landing beside mentioned in your post, you will travel absolutely visa free.
