Travelling from US To Thailand with two layovers in China do I need a Visa on the return flight?

The last time I went to Thailand coming home from Bangkok we were supposed to stop in Guangzhou first then in Wuhan but the Airline changed a group of US citizens to go directly to Wuhan. The airline changed our return flight from two stops to one citing visa issues, then when I got to the layover location in Wuhan my original printed travel itinerary didn’t match the changed itinerary and I had to internet connection (as I didn't have a Chinese phone) so I could not login to show them the updated itinerary which caused a bunch of delays and customs holding us for a couple hours. How can I avoid this on my next trip, do I need a transit visa, or a tourist visa or should I avoid 2 layovers on my way home?

The way to avoid this is always to print everything, at least two copies.
