About:72-Hour Visa-Free Transit

HKSAR Passport Holder, Transit at Beijing Air China

HKG - PEK - France
Transit time is 11pm to 2am
Same company, one ticket

As a HKSAR passport holder, do I need to show a valid "China Return Permit" during the 3-hour transit or before boarding the HKG-PEK flight?

The Chinese government does not consider Chinese nationals with resident status of Hong Kong and Macau traveling to China as international travelers, and hence the SAR (Hong Kong or Macau) passports (or ethnic Chinese holding British National (Overseas) passports) cannot be used when entering or transiting through China, regardless of whether they are arriving from Hong Kong, Macau, Taiwan or from overseas.

As you can see having a Mainland Travel Permit for Hong Kong and Macau Residents (commonly called a "Home Return Permit") is essential.
