On the way to HNL i have 6h20' time (layover) in Shanghai and into this time i have to change airport.

On the way from HNL to ATH i entry China in Shanghai/Pudong airport, stay there for 4h45' and continue (i dont get out of the airport) to PEK. In PEK is the place i like to sta for 2 nights (51h more) or total time from 16:20SHA/PUD to 2:30PEK after 2 days (total time in China 58h).

As explained by Zupan, you need a visa for your second entry for sure. You might as well apply for a multiple- or double-entry visa and then you have the option to use it on the first entry too.

Regarding your first itinerary, you didn't mention the duration of your layover in Shanghai. This is important detail because this itinerary is not eligible for 144 hour (72 hour TWOV in Beijing and Shanghai was replaced by 144 hour TWOV couple of years ago) visa free transit since you are traveling to two different Chinese transit zones in a row. Maybe you are eligible for 24 hour visa free transit, but for the time being we don't know your entire time of transit in China.

Your second itinerary requires a tourist (L) visa because it is not eligible for both 24 and 144 hour visa free transit. In other words, it takes more than 24 hours and it has two different Chinese transit zones in a row.
