Luke, first of all, it is 144 hour visa free transit and not "144 visa". You should use correct terminology to avoid any possible misunderstandings.
It is fine to stay in a hostel, especially if it is booked through some of the global websites and Chinese similar websites. Hostels of this type will do a registration for you. When you choose your hostel, just email them and ask whether they'll be doing it. Nearly every registered lodging place is online with the police and registering foreigners is no great hassle for them.
You will not be refused entry in your Chinese transit city when traveling on 144 TWOV if your itinerary and your citizenship are eligible. If one of the mentioned two details is disputable, you will not be allowed to board the plane bound for China in the first place.
To be eligible for 144 hour visa free transit, you need a confirmed tickets for the city in China and the ticket for the third country or eligible territory like Hong Kong, Taiwan and Macau. Keep in mind that your flights should not have any additional landing within mainland China beside the city where you plan to spend 144 hours, of course. This is not a visa, so there is no fee to be paid for.
Simply speaking your itinerary has to be something like this:
London - Beijing - Bangkok
