Your itinerary:

London - Beijing - Hong Kong

If there are no unreported stops, is definitely eligible for 144 hour visa free transit.

Anyway, your intention to visit Shenzhen from Hong Kong will require a Shenzhen VOA (visa on arrival). Nothing complicated, you can obtain it on the border crossing for 168 CNY and you can stay for 5 days in Shenzhen area. You can leave Shenzhen to Hong Kong by any mean of transport that you like.

After that, your itinerary:

Hong Kong - Beijing - London, if there are no unreported stops is definitely eligible for 24 hour visa free transit.

As you can see, only the segment with Shenzhen will require a visa on arrival, but the price for Spanish citizens is fair and the process of obtaining one is simple.
