About:China Visa on Arrival

BRL-PEK-SZX and SZX-PVG-HEL-BRL will that work?

Hi if I fly from Berlin-Beijing to Shenzhen and 5 day later come back Shenzhen-Szanghaj Pudong-HEL Helsinki Vantaa to Berlin (Iam from Poland) - will that actually work with visa on Arrival?

Unfortunately not. You would be eligible for Shenzhen VOA only in case that you arrive directly to Shenzhen, without previous stops within mainland China. Also, it is not allowed to leave Shenzhen, if in possession of Shenzhen VOA, via a mainland China layover. So, you have two obstacles in using both visa free transit scheme and Shenzhen VOA and I have to tell you that your itinerary is typical visit to China and you really have to obtain a Chinese tourist (L) visa in advance.
