Look, since you have two stops within China, you are allowed to just 24 hours visa free transit. So, if the time between your scheduled departure by cruise is less than 24 hours from your first scheduled landing in China, in your case in Beijing, you are fine and can travel without a visa. Quite contrary, if this time is longer than 24 hours, you need a Chinese visa.
Your second itinerary:
South Korea - Beijing - Japan (you have written some a bit unrealistic order of destinations within your itinerary: Korea - Japan - Beijing - Japan)
Am I right that this is your exact itinerary? If that's correct, you would be eligible in Beijing for 24 or 144 hours visa free transit because depending of time your cruise plans to stay in Beijing.
