Your first itinerary:

US - Beijing - Shanghai - South Korea

Look, since you have two stops within China, you are allowed to just 24 hours visa free transit. So, if the time between your scheduled departure by cruise is less than 24 hours from your first scheduled landing in China, in your case in Beijing, you are fine and can travel without a visa. Quite contrary, if this time is longer than 24 hours, you need a Chinese visa.

Your second itinerary:

South Korea - Beijing - Japan (you have written some a bit unrealistic order of destinations within your itinerary: Korea - Japan - Beijing - Japan)

Am I right that this is your exact itinerary? If that's correct, you would be eligible in Beijing for 24 or 144 hours visa free transit because depending of time your cruise plans to stay in Beijing. If it is less than 24 hours, you will be eligible for 24 hours visa free transit and if more than 24 hours, you will be eligible for 144 hours visa free transit.

Your third itinerary:

Japan - Shanghai - US

This itinerary is definitely eligible for 144 hours visa free transit, of course if there are no some other stops that you have not reported.

Actually, I suggest you to check thoroughly and with good focus of your entire itinerary and feel free to come back here to clarify all the details that should be taken into consideration for your enjoyable trip.
