Hong Kong - Beijing - US is eligible itinerary and you will be eligible for 144 hours visa free transit in Beijing. Of course, I just hope that you don't have any additional stops that could ruin this eligible structure.

You will declare at check-in in Hong Kong that you will travel to US via Beijing using 144 hours visa free transit. You will present your tickets in hard copy. After that you will be allowed to board the plane. After your arrival in Beijing, you will approach the 144 hours counter where you will repeat the same thing as you did in Hong Kong and you will present your tickets and preferably accommodation booking. You will also fill out the blue form before approaching the counter. After that, you will get s sticker in your passport and leave the airport. That's it.
